Holy Molely

Our first full day in Puebla and it was time for cooking class - on the menu today - Mole, best known in this region.  Mole is a dish that has many different recipes.  In fact each family makes it slightly different.  Peppers, spices, plantains and the surprise ingredient - chocolate.  

Before starting the actual cooking process our 3 chefs took us to the market to buy ingredients and teach us more about the ingredients, especially the chili’s.  A nice clean and organized market with delicious products, all displayed in a very pleasing manner.

Back to their kitchen and time to get to work. We learned more about cleaning the chili’s - hint baking soda and a few drops of line will remove that burning feeling in fingers from strong products like chili, garlic or onions. Cutting, stirring, tasting, all part of the process to make this interesting dish.






The work was complete and it was time to taste the results.  Truly amazing as 2 different batches were made with the same ingredients (slightly different quantities) but different techniques and the result - 2 different, although subtle changes in the taste of the dishes. Just like the cooking, the mole was served in two different ways. Both were delicious!
